The "title" is stored in the ID3 tag (which is a section inside the file which holds "metadata" about the mp3). You can get the content of the id3 tag by using the tag in most functions in Flash Renamer. (Note that I am taking about two different tags here: id3 tags and used by Flash Renamer. Read more about the tags FR is using in the manual)
Explorer uses this id3 title tag to display the title as you indicate.
Flash Renamer can also change to the id3 tag. Use the "mp3 tagger" function for this. You can either type in the boxes directly, or use the more flexible "quick setup" to pick parts of the filename to put into the id3 tag. You should read about this in the manual, where i try to explain in more depth about how to use the function and what tags are.
