The jpeg image standard does not specify how to save an image, only how to read it. This means that each software is free to save it as it wishes, as long as it can be read according to the standards. Jpegsnoop analyzes how the jpeg has been saved and by using a database it can guess which program/camera was used to save it. Think of it like fingerprints in the image data. Since my program does not alter the image data (only the tags, which are located "around" the image data), this information will still be available. I hope this answers your question!
